One of the oldest grains known to humans, millet supplies fibre, energizing carbohydrates, protein and is rich in lysine, an amino acid typically low in grains. Millet is easy to digest and gluten-free, making it an excellent grain for those with celiac disease or a wheat allergy. Rich in iron, zinc and copper, millet supports a strong immune system to fight against disease. Its fibre, potassium and magnesium help to keep blood pressure healthy, while its B vitamins support a healthy homocysteine level. Millet is also rich in phytochemicals, including phytic acid to lower cholesterol and phytate to protect against cancer. As well, the millet grain supplies a small amount of vitamin E, a potent antioxidant to protect the heart and prevent cancer. Action Tip: Millet has a mildly sweet nut-like flavour. It makes a great-tasting cereal and its flour can be used in breads, muffins and baked goods. Millet goes well in soups, stews, casseroles and stuffing and can be served as a pilaf. |
