Although it takes a lot of work to get through the layers of an artichoke, it’s worth taking the trouble to get to its tender heart. The layers of an artichoke are rich in heart-healthy phytochemicals including vitamin C, fibre, magnesium, and folate. You’ll also find a particular phytochemical called cynarin that helps to remove cholesterol from the body, lowering total and LDL cholesterol. The heart of an artichoke provides a group of flavonoids that are known as silymarin. Silymarin are powerful antioxidants and potent anti-inflammatories that have many abilities to ward off cancer. Action Tip: Artichoke hearts are scrumptious on pizzas, in dips, topped on crackers, tossed in salads and pasta sauces. Jars of marinated artichoke hearts are the quickest way to enjoy the flavour of artichokes. Steamed fresh artichoke make a great appetizer, especially dipped in low fat sauces. |
