A delicious change from an everyday sandwich or wrap. This meal offers unsaturated fat—important for a healthy heart.

Warm Mango and Prawn Wrap

 

60 g package rice vermicelli noodles 2 oz
125 mL Western Family light mayonnaise 1/2 cup
15 mL Hoisin sauce 1tbsp
15 mL Western Family butter or margarine 1tbsp
2 garlic cloves, minced
12 large raw shrimp, peeled and deveined
3 mL dried red chili flakes 1/2 tsp
4 Western Family flour tortillas 25 cm (10")
1 medium mango, peeled and sliced
1 medium avocado, peeled and sliced
4 green onions
1 bunch daikon sprouts or watercress, rinsed and drained

1. Place vermicelli in a medium bowl; add hot water to cover. Set aside and allow to rehydrate (about 10 minutes). Rinse with cold water, drain well and set aside.

2. In a small bowl, mix together mayonnaise and Hoisin sauce; set aside.

3. In a skillet, melt butter or margarine over medium-high heat; add garlic, shrimp and chili flakes; saute until shrimp are translucent (about 1minute).

4. For each wrap, divide and place on tortilla in this order: rice vermicelli, mango and avocado slices, trimmed whole green onion, sprouts and warm prawns. Dollop mayonnaise mixture over ingredients. Fold or roll tortilla to enclose filling.

Tip: For an easy, but elegant dessert, dip fresh strawberries into melted chocolate. Place on waxed paper until set. We recommend using the baking chocolate available in our Bulk Foods department.
