Variety is a key principle of healthy eating. Vary this parfait using kiwi, stewed strawberries and rhubarb or canned peaches in place of the pineapple.

Pineapple Parfait

 

Ingredients:

175 mL (¾ cup) Western Family Fat-Free French Vanilla Yogurt
125 mL (½ cup) Western Family Low Fat Granola
125 mL (½ cup) Western Family Crushed Pineapple in it’s own juice
45 mL (3 Tbsp) grated coconut, toasted

1. In parfait dish or tall glass, place ¼ of the yogurt.
2. Top with a sprinkle of coconut, ¼ of the granola, a bit more yogurt, ¼ of the pineapple, a bit more granola, yogurt, pineapple and coconut.
3. Repeat in second glass for 2 servings or save ingredients for a snack the next day.

Makes 2 servings.
