Begin your day by sprinkling ground flaxseeds on cereal or yogurt for added fibre and omega-3 fatty acids.

Peanut Butter Flaxseed Cookies


125 mL Western Family butter 1/2 cup
125 mL white sugar 1/2 cup
125 mL brown sugar, packed 1/2 cup
1 egg
5 mL vanilla 1 tsp
125 mL Western Family Natural 1/2 cup Peanut Butter, creamy
310 mL Western Family all-purpose flour 11/4 cup
125 mL Western Family flax seed, ground 1/2 cup
5 mL baking soda 1 tsp
dash salt

1. Preheat oven to 190 C (375 F).

2. In large mixing bowl, combine butter and both sugars until creamy. Add egg and vanilla and blend to combine. Add peanut butter and mix until smooth.

3. In separate bowl, mix all remaining ingredients. Stir into butter mixture to form cookie dough.

4. Spoon tablespoons and roll into balls. Place on non-stick cookie sheet or cookie sheet lined with parchment paper. Using a fork, flatten cookies in a crisscross pattern. Bake at 190 C (375 F) for 10 minutes.

Makes 24 Cookies.
