2. In a large bowl, combine the 2 flours, salt, baking powder, baking soda and orange peel; set aside. 3. In the bowl of an electric mixer, combine the oil and brown sugar and mix until the sugar has dissolved. 4. Add the yogurt, orange juice and eggs; beat until combined. Add the flour mixture and mix until just combined (do not overmix). 5. Fold in the papaya cubes and divide the batter between the two loaf pans, smoothing the top with a spatula. 6. In a small bowl, combine all streusel ingredients. Using fingertips, rub the butter into the sugar and coconut until the mixture is combined and crumbly. Sprinkle streusel over loaves, gently patting it into the batter. 7. Bake for 35-45 minutes, or until a toothpick inserted into the center of the loaves comes out perfectly clean. Cool in the pans for 15 minutes before turning loaves onto a cooling rack. Cool completely before cutting each loaf into 10 slices. Makes 2 loaves, 10 slices each. Nutritional
