Lemon Yogurt Poppyseed Muffins
2. Beat milk, applesauce, oil, yogurt and egg in a large bowl. 3. In separate bowl, combine flour, sugar, poppy seed, lemon peel, baking powder and baking soda. Stir into wet mixture until just combined. 4. Divide batter into muffin tins and bake 16 to 18 minutes or until golden brown. Immediately remove from pan. 5. Optional: Drizzle easy lemon glaze over warm muffins. Easy Lemon Glaze: Combine 125 mL (1/2 cup) icing sugar with 30-45 mL
(2-3 Tbsp) freshly squeezed lemon juice. Mix until smooth and drizzling
