Papaya
is rich in an enzyme called papain. The greener the fruit the
more active the papain. Papain helps digest protein which is
why it often used as a meat tenderizer!

Antipasto Platter
Pineapples
should be heavy for their size, well-shaped, and fresh-looking with dark
green leaves. Shells should be dry, crisp, and range in color from greenish-brown
to golden brown.

Dole Fresh pineapple 1
2 medium Dole bananas, sliced diagonally 2
2 oranges, peeled and sliced 2
125 mL red onion, thinly sliced ½ cup
250 g low fat, sharp cheddar cheese, cut into small cubes ½ lb
2 jars (6 oz. each) Western Classics marinated artichoke 2
hearts
green leaf lettuce
125 mL Western Classics fat-free Italian salad dressing, ½ cup optional

Twist the crown from the pineapple. Quarter pineapple lengthwise. Remove
core. Cut whole fruit from skin. Slice into thin wedges.

Arrange fruit, onion, cheese and artichoke hearts in lettuce-lined
platter.

If desired, drizzle salad dressing evenly over platter.
