The Ingredients

23 mL Western Family instant coffee granules1 1/2 tbsp
125 mL boiling water 1/2 cup
250 mL Western Family all purpose flour 1 cup
310 mL Western Family whole wheat flour 1 1/4 cup
175 mL cocoa powder 3/4 cup
8 mL baking soda 1 1/2 tsp
5 mL baking powder 1 tsp
5 mL salt 1 tsp
2 Western Family eggs
500 mL granulated sugar 2 cups
10 mL Western Family vanilla 2 tsp
425 mL 1% buttermilk 1 3/4 cup
60 mL Western Family canola oil 1/4 cup

The Method

Dissolve instant coffee granules in boiling water. Let cool. Alternatively, use leftover cooled coffee.

Preheat oven to 350F (180C). Spray a 9x13" pan or 2-8" round pans with non-stick cooking spray.

In a small bowl, combine flours, cocoa, baking soda, powder and salt. Stir to blend.

In a large bowl, beat eggs with sugar. While continuing to beat, add vanilla, buttermilk, oil and cooled coffee. Gradually add dry ingredients until well blended. Pour cake mixture into prepared pan. Bake for 35 to 40 minutes or until toothpick inserted in middle comes out clean. Let cool before removing from pan.

To make icing, beat butter and slowly add icing sugar and cocoa, alternating with milk. Beat until well blended. Add vanilla. Once cake is cooled, top with icing.

Makes 12-16 servings.
