When serving homemade loaf, keep portions reasonable – unlike some of the huge portions served in coffee shops!

Basic Loaf with Variations

1 egg, beaten
60 mL Western Family butter or margarine, ¼ cup
melted
125 mL skim milk ½ cup
60 mL Western Family applesauce, ¼ cup
unsweetened
grated peel and juice of 1 lemon
500 mL Western Family all purpose flour 2 cups
175 mL granulated sugar ¾ cup
1 mL salt ¼ tsp
10 mL Western Family baking powder 2 tsp
3 mL baking soda ½ tsp

1. Preheat oven to 350° F (180° C). Spray a loaf pan with cooking spray.

2. Prepare in small bowl #1: Egg, melted butter or margarine, milk, applesauce and lemon peel and juice; mix.

3. Prepare in large bowl #2: Remaining ingredients; mix.

4. Add bowl #1 to bowl #2. Mix gently to combine ingredients. Do not completely blend wet and dry; leave slightly lumpy.

5. Transfer batter to prepared pan.

6. Bake for about 45 minutes or until a toothpick inserted in the centre comes out clean. Let cool in pan 10 minutes. Turn out onto rack to cool completely before wrapping. Loaf slices better the next day.

Variations:
Add one of the following. These and other variations will likely take a little longer to cook – about 50 minutes instead of 45 minutes.

  • Add 250 mL(1 cup) fresh or frozen blueberries (do not thaw) to bowl #2 before combining.
  • Add 1-1/3 cup(325 mL) chopped dates to bowl #2 before combining.
  • Add 1 cup (250 mL) any flavour baking chips to bowl #2 before combining.
