Basic Loaf with Variations
2. Prepare in small bowl #1: Egg, melted butter or margarine, milk, applesauce and lemon peel and juice; mix. 3. Prepare in large bowl #2: Remaining ingredients; mix. 4. Add bowl #1 to bowl #2. Mix gently to combine ingredients. Do not completely blend wet and dry; leave slightly lumpy. 5. Transfer batter to prepared pan. 6. Bake for about 45 minutes or until a toothpick inserted in the centre comes out clean. Let cool in pan 10 minutes. Turn out onto rack to cool completely before wrapping. Loaf slices better the next day. Variations:
